Fermentation:The cherries were fermented for about 3 days in anaerobic tanks, after that the were de-pulped, and fermentated for about 2 days with the mucilage.
Drying Method:After the fermentation process, the coffee was dried with the mucilage for 2 days in mechanical dryers, and for 10 days in parabolic drying.
