Fermentation:
Cherries were strictly selected and fermented in GrainPro bags and tanks for 70 hours. We did a rotation of the tanks every 5 hours.
Drying Method:
After anaerobic fermentation, the coffee was drained of liquids for 96 hours on solar dryers and then dried in mechanical dryers for 168 hours at temperatures of 37°C to 38°C.
