Fermentation:
Cherries were selected and fermented for 12 hours in aerobic tanks. Then the cherries were fermented for 48 hours in anaerobic tanks and we did a rigorous rotation process.
Drying Method:
After anaerobic fermentation, the coffee was dried in mechanical dryers for 240 hours at a temperature of 39°C.
