Description: | Fermentation: The fermentation time for this lot last 48 hours. Is done in open tanks and without water. Temperature is measured every 6 hours and the PH levels are analyze during this time making sure they don't surpass the stipulated average. Since during the fermentation, there is presence of oxygen the team at the benefits facility in Las Margaritas Farm must be very cautious in order to avoid phenols and other cup defects. Drying Method: Once the whole fermentation is finished the cherries are moved to a mechanical dryer where they last 8 days until moistures is on the ideal percentage point. This mechanical dryer are regulated to a temprature of 38°C - 39°C. |
