Description: | Fermentation: The fermatation process for this lot in known at our farm as a hybrid since it starts with a fermentation in whole cheries in open tanks for 25 hours and then pass to a pulper machine. Once this process is finished the beans go through a second fermentation in mucilage with the presence of oxigen for 38 hours. Drying Method: Parabolic and Mechanical dryer. The batch passed through the Mechanical dryer for a dehydration of 24 hours and then goes to the parabolic located in La Esperanza Farm for 6 days using the natural heat of the sun during the day. |
