Why this name?:
In our country you can admire the geological formations of the Andes Range Mountains. This mountain chain that crosses seven countries in South America, in Colombia, branches into two mountain ranges called Occidental and Central, and from this the Oriental is detached. They have peaks mainly of volcanic formation, but in the Central and Eastern there are elevations of 5,000 meters above sea level covered with snow.

| 描述: | Fermentation: The whole cherries are fermented for 20 hours in open tanks. Once this first stage is finished the batch is moved to barrels where the cherries go through a second fermention for 72 hours in anaerobic form. Drying Method: Once the whole fermentation is finished the cherries are moved to a mechanical dryer where they last 8 days until moistures is on the ideal percentage point. This mechanical dryers are regulated to a temperature of 38°C - 39°C. |
